Monaco was founded by the team that created Mamilla Los Angeles. Monaco was created to provide guests a truly unique experience coupled with amazing food and cocktails. The name comes from the founders’ parents who grew up in Monaco. Like the French Riviera, the restaurant is the intersection of different flavors, cultures, and experiences.

Chef skill's passion for food started early on. He is a skilled, dedicated and hands-on chef with experience in the US and Europe. His keen eye for food quality, consistency, presentation and execution has propelled him through the culinary world.
He has worked in executive chef positions across the world such has the Vita Italian Bar & Grill and Sergi Arola “Gastro Bar” with two Michelin stars, and Salvador Gallego ” Cenador De Salvador with one Michelin Star in Madrid Spain.
